French Onion Cauliflower

I love French Onion Soup and decided to take the idea and transform a head of cauliflower. It turned out rather delicious. I caramelized some onions and topped the florets with some Gruyère cheese and croutons. I went back into my archives and found my recipe for French Onion Chicken Meatballs, which is also a winner.

Directions
1Preheat oven to 425° F.
2Heat 1 tablespoon oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, for 5 minutes. Add Worcestershire, sherry, salt, and pepper; reduce heat to medium-low and continue cooking, stirring often, until golden brown, 10 to 15 minutes more. Remove from heat.
3Meanwhile, arrange cauliflower florets on a baking sheet with cooking spray. Combine the remaining 1 tablespoon oil with garlic powder and salt in a bowl and stir to combine. Roast until tender, about 10 minutes. Remove from oven and top with the reserved caramelized onions, cheese and croutons. Put it back in the oven for a few minutes until the cheese has melted.
