Egg Roll in a Bowl

My friend Kay suggested this old Weight Watcher's recipe for Egg Roll in a Bowl. I made it yesterday for lunch and we loved it. This recipe is a great way to get a healthy and delicious meal on the table quickly. The Asian flavors enhance the dish, which is packed with protein and vegetables. You can also add extra veggies like thinly sliced red bell peppers, and mushrooms to the mix.

Ingredients

1 pound lean ground chicken, turkey or pork

cooking spray oil

sea salt and pepper, to taste

½ onion, finely diced

1 carrot, julienned or coarsely grated

3 garlic cloves, minced

3 cups cabbage, thinly sliced

1 teaspoon fresh ginger, minced or you can use ground ginger

3 tablespoons low-sodium soy sauce

2 tablespoons unseasoned rice vinegar

2 teaspoon sesame oil

1 tablespoon apricot jam

1 tablespoon green onion, chopped for garnish

¼ teaspoon sesame seeds, for garnish

Directions

1Coat a nonstick skillet with nonstick spray and heat over medium-high. Add the ground meat and brown until no longer pink, about 5 minutes, breaking up the meat with a spatula as it's cooked. Season with salt and pepper.

2Add onion and carrots and sauté until onion is tender, 5-7 minutes, stirring occasionally. Add the garlic and cook another 30 seconds, stirring constantly.

3Then add the cabbage, ginger, soy sauce, vinegar, sesame oil, and jam. Continue sautéing for 5-7 minutes, stirring occasionally, or until the cabbage is tender.

4Serve garnished with green onions and sesame seeds
