Divorce Salad

I have made several Marry Me recipes. My husband was a little upset by the title of this salad. One bite and he was raving and would probably marry me again. It's that good!
"Divorce Salad" refers to a specific type of salad, and its name often comes with a story. The idea behind this "Divorce Salad" is that it's easy to make, nourishing, and designed to be something you can enjoy when you need a simple, comforting meal, especially during a challenging time. It combines marinated cannellini beans, Romaine lettuce, Parmesan cheese and crispy fried onions.

Ingredients
Dressing/Bean Mixture
½ cup extra-virgin olive oil (plus more for drizzling)
1 teaspoon Diamond Crystal or ½ teaspoon Morton kosher salt (plus more)
1 teaspoon freshly ground pepper (plus more)
2 small shallots, finely chopped
1 15-ounce can cannellini (white kidney) beans, rinsed
For Serving
Directions
1Whisk together the vinegar, mustard, honey, onion powder, oil, salt, and pepper in a medium bowl until emulsified.
2Add the finely chopped shallots, rinsed cannellini beans, and ⅓ cup Parmesan to the dressing mixture and toss to combine.
3Taste the bean mixture and adjust seasoning with more salt and pepper if desired. Cover and chill for at least 1 hour. The bean mixture can be made up to 3 days ahead and kept chilled.
4Arrange the romaine lettuce leaves on a platter. Lightly drizzle the lettuce with oil and season generously with salt and pepper.
5Spoon the chilled bean mixture over the seasoned lettuce, and scatter store-bought fried onions and shaved Parmesan on top.
