I made this Creamy Dill Pickle Chickpea Salad is delicious and refreshing. It's made with chickpeas, cucumbers, dill pickles, Tahini, Greek yogurt, and fresh dill. It is a great source of protein and fiber.
You can serve this salad on its own, or on lettuce leaves or bread. It's great for lunch, potlucks, or picnics.

Ingredients
3 cans chickpeas, rinsed and patted dried
2 cup cucumber, diced
1¾ cups celery, diced
1½ cups dill pickles, diced
½ cup red onion, thinly sliced
¼ cup fresh dill, chopped
Dressing
½ cup of tahini
¼ cup of plain greek yogurt
3 tablespoons lemon juice
1 tablespoon Dijon mustard
5 tablespoons pickle juice
salt and black pepper, to taste
1 teaspoon garlic powder
Directions
1Whisk all dressing ingredients in a large mixing bowl. Once creamy and smooth, add all salad ingredients to the same mixing bowl. Toss until coated. Cover and chill in the refrigerator for at least 2 hours or as long as overnight.
