Creamed Corn

I grew up in Indiana and the only Creamed Corn I had came out of a can. I suppose it is because it was the '60s when eating out of a can was the thing to do. Anyway, I decided to make my own version of Creamed Corn and it's super easy and WAY better!

  • Prep: 5 mins
  • Cook: 20 mins
  • Yields: 8 Servings

Ingredients

⅓ cup butter

⅓ cup all-purpose flour

1 cup heavy whipping cream

1 cup whole milk

1 tablespoon sugar

1 teaspoon salt

Dash white pepper

5 cups frozen corn, thawed

¼ cup Parmesan cheese, grated

Directions

1In a saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add cream, milk, sugar, salt and pepper. Bring to a boil; boil and stir for 2 minutes. Add corn; heat through.

2Transfer to an un-greased 1½ -quart broiler-proof dish. Sprinkle with Parmesan cheese. Broil 5 inches from the heat for 3 - 5 minutes or until lightly browned and bubbly.
