If you can't stand the heat..... I am not a sunny climate, hot weather type of person. I know this must be a shock to most of you, but it’s true. I hate the heat. Unfortunately, I live in Los Angeles. I try to think of things that I can make in the morning and pull out of the fridge for dinner. One of my go to meals on a bloody hot day is – cold noodles with sesame sauce. It’s a great dinner and it’s delicious. I always eat it with chop sticks and a very cold glass of wine!

Yields: 4 Servings
Ingredients
3 - 4 green onions, sliced
8 ounces soba or buckwheat noodles
2 Tablespoons toasted sesame seeds
Dressing
3 Tablespoons rice vinegar
1 Tablespoon sesame paste
2 Tablespoons peanut butter
2 teaspoons honey
2 teaspoons Dijon mustard
2 Tablespoons soy sauce
1 Tablespoon chili sauce
¼ cup vegetable oil
4 Tablespoons sesame oil
juice from ½ orange
salt & pepper to taste
2 cups cooked chicken, cubed or shredded
Directions
1In a mixing bowl combine vinegar, sesame paste, peanut butter, honey, mustard, soy sauce and green onions. Whisk in oils slowly. Add orange juice and salt and pepper. Set aside.
2Cook pasta in a large pot of boiling water according to directions on the package, drain and run under cold water. Toss noodles with the dressing and chicken. Chill for at least 30 minutes before serving.
