Clearman’s Cheese Spread

Whenever my late mother-in-law made spaghetti, she always made Clearman's cheese bread. My family can't have spaghetti without it. They sell it locally only or online. Many of our family members have moved away, so I decided to search for a recipe. My friend Pat made the first batch and they gave it their seal of approval. It's basically a whipped cheese butter made with Cheddar, Romano, dry mustard, celery salt, garlic salt, lemon juice, Tabasco sauce, paprika, butter that you put on sourdough bread and broil.  Oh, and by the way, it costs about a third less to make of what they sell it for. 

  • Prep: 10 mins
  • Yields: Makes 1 pound of cheese spread

Ingredients

1 pound margarine or butter, softened

¾ pound finely grated cheddar cheese

3 ounces Romano cheese, grated

3 tablespoons plus 2 teaspoons fresh lemon juice

½ teaspoon dry mustard

½ teaspoon celery salt

2 teaspoons garlic powder

2 teaspoons Tabasco sauce

1 teaspoon paprika

Directions

1Mix everything together in a food processor and chill for at least 30 minutes. Use to make cheese bread with one tablespoon per slice of sourdough bread. Broil in an oven until melted, and just toasty.

No review of the recipe, but Northwoods Inn cheese spread and its salad are forever in my best foods ever memories from my teen years in the early 60’s living in Alhambra. We would go the one that I thought now had been in Arcadia but may have been San Gabriel. It was a special treat to go there and I appreciated it then and now! Can’t find the spread here in the Monterey Bay Area so will make some for Christmas and WOW everyone!

When I moved away from the San Gabriel Valley, it was over a year before I found the Northwoods spread at a local Vons in Santa Barbara! 2 things: 1) the date stamp is not readable on the cover of the plastic container; 2) on several occasions the spread has been “moldy” about halfway down into the container!! Soooo very disappointing!!!
