This Chicken Tostada Salad is easy to make and delicious.
8 tostada shells (from 4.5 ounce package)
4 cups lettuce, shredded
15 ounce can of black beans, drained, rinsed
2 boneless skinless chicken breasts (about 1/2 lb), cooked and shredded
1 cup salsa
1/4 cup sliced ripe olives
1 avocado, sliced
1/2 cup cheddar cheese, shredded
1/4 cup sour cream
1On each of 4 plates, place 2 tostada shells, slightly overlapping.
2Top tostada shells with remaining ingredients. Serve with additional salsa if desired.
