Chicken Stroganoff

I had a hankering for beef stroganoff but only had chicken. This Chicken Stroganoff is equally as delicious over a bed of noodles.

  • Yields: 4 Servings

Ingredients

4 slices bacon, sliced

1 pound boneless skinless chicken breasts, cut into 1-inch strips

1 tablespoon butter

1 pound mushrooms, sliced

1 medium onion, thinly sliced

3 tablespoons all-purpose flour

salt and pepper, to taste

1 cup chicken broth

½ cup sour cream

noodles, optional

Directions

1Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan.

In the same skillet, add the chicken; cook 6 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Remove to plate.

In the same skillet, melt the butter and add the mushrooms and onion; cook 5 to 6 minutes, stirring occasionally, until onions are tender. Stir in flour, salt, and pepper.

Reduce heat to medium. Add chicken and broth; cook 3 to 4 minutes, stirring occasionally, until slightly thickened. Stir in sour cream until well blended and heated through.


3Serve over noodles.

Happened to have all the ingredients (although subbed in turkey bacon) and deglazed the pan with some white wine! Was delicious and thanks for the inspiration Leslie!
