This Chicken & Broccoli Salad with Lemon Poppyseed Dressing is a great salad to serve on a hot summer's night. I've always loved things you can made ahead.

Yields: 4 - 6 Servings
Ingredients
2 cups chicken, chopped (rotisserie chicken is a great option)
2 cups fresh broccoli, blanched and cut into small pieces
¾ cup dried cranberries
½ cup sliced almonds, toasted
½ cup sunflower seeds, toasted, salted
2 cups sharp cheddar cheese, cubed
Dressing
1 cup mayo
1 tablespoon red wine vinegar
2 tablespoons sugar, or to taste
1 large lemon
salt and pepper, to taste
½ tablespoon poppy seeds
Directions
1Mix the chicken and broccoli and then add the cranberries, almonds, sunflower seeds, and cheese.
2In a bowl, whisk together the mayo, red wine vinegar, sugar, zest of one lemon, salt and pepper and about 1 tablespoon lemon juice. Then whisk in the poppy seeds.
3Toss the dressing with the salad and place in the fridge to marinate for 15-30 minutes.

Excellent summer salad. I added about 1 C. chopped cauliflower and 3 T. minced red onion.
