Chicken à la King

Chicken à la King is tender chicken in a creamy sauce with mushrooms,  pimientos and peas. There are many different stories about the origin of this recipe. A classic dish that evokes childhood memories, Chicken à la King is elegant and comfort food at its best.

Ingredients

½ cup butter

8 ounces mushrooms, sliced

½ cup all-purpose flour

2 cups chicken broth

1½ cups milk

1 cup frozen peas

1 cup drained pimientos pimientos, chopped

4 cups cooked chicken, chopped

Directions

1In a large saucepan, melt butter over medium-high heat. Add in mushrooms and cook until mushrooms are soft, about 5 minutes.


2Add in flour and stir until there are no more specks of flour left. Pour in chicken broth and milk and bring to a boil. Reduce heat to low and simmer until sauce is thickened, about 3 minutes.


3Stir in frozen peas, drained pimientos, and cooked chicken and let heat through, 2 to 3 minutes.


4Serve hot over cooked rice, pasta, toast, or biscuits.

Ver nice recipe, & glad that the sauce is homemade, which elevates this dish. I’ll have to give this ‘oldie but goodie’ a try on one of those busy weeknights. Thanks for the memories.
