Here is a really delicious Cheesy Potato Chowder. My husband said we need to keep this recipe in the family archives. I added some white pepper to it, but the simplicity is what really makes this soup good. Some crumbled bacon bits would not go amiss as a garnish...

Cheesy Potato Chowder

Ingredients

4 cups potatoes, cubed

4 cups water

1½ cups carrots, sliced

1 cup celery, sliced

½ cup onions, diced

1 teaspoon salt

2 cups ham, chopped

½ cup butter

½ cup flour

2 cups milk

1 cup cheddar cheese, shredded

¼ teaspoon white pepper

Directions

1Combine potatoes, water, carrots, celery, onions and salt. Bring to a boil. Reduce heat to a simmer until vegetables are tender. Do not drain.

2In a saucepan, melt butter then whisk in flour. Cook one minute.

3 Gradually stir in the milk, cook until thickened. Add cheese and pepper, stir until melted.

4Combine the potatoes and vegetables and simmer until ready to serve.
