These Cheesy Stuffed Mushrooms are deceptively simple to make. They are great for parties and get-togethers because they are not only delicious but also can be made ahead.

Ingredients
3 large or 6 small mushrooms, stalks removed but reserved
1 tablespoon butter
2 green onions, diced
⅔ cup cream cheese, softened
½ cup cheddar cheese, grated
½ cup mozzarella cheese, grated
salt & freshly ground pepper, to taste
Directions
1Preheat the oven or grill to 400°F.
2Melt the butter in a frying pan and add the chopped reserved mushroom stalks and green onions. Cook for 5 minutes.
3Add the mushroom mixture to a large bowl and mix with the cream cheese, grated cheeses, salt and pepper.
4Using a large spoon, stuff the mushrooms with the mixture.
5Bake or grill for 20 minutes or until golden brown.
