Caviar Croque-Monsieur

Here is a recipe from my friend Jessica:
This is the most indulgent thing we’ve ever made. Picture it, New Year’s Eve 2018: here we are, me and my husband, totally without invitations. So as we’ve done before, we decided to go it alone at home. So why not splurge on something decadent and expensive? If it’s just for two, right? Well, this is one for the ages. Spend a little money, open some champagne, and enjoy the fanciest grilled cheese sandwich you’ll ever have!

Ingredients

4 slices brioche or white bread

About 1½ ounces Swiss Gruyère cheese

1 ounce fresh or pasteurized sturgeon caviar (We used Tsar Nicoulai white sturgeon caviar from California, available at Whole Foods)

2 to 4 slices smoked salmon

2 tablespoons clarified butter

Directions

1Cut he crusts off the bread, you damn peasant!

2Slice that cheese thinly. What are you, an animal?

3Cover two slices of bread with a single layer of cheese. Spread caviar on the cheese but don’t go to the edges. Lay a slice of smoked salmon, cut to fit the bread, on top of the caviar. Cover with the remaining two slices of bread.

4In a nonstick pan on medium, heat 1 tablespoon of the butter. Cook the sandwiches just like any grilled cheese till toasted, but don’t let the precious caviar leak out. Add the remaining tablespoon of butter, turn the sandwiches over, and then cook until toasted on the other side.

5Slice in quarters and serve.

6Marvel at your culinary skill.
