Buttermilk Pie

Buttermilk Pie is a staple of Southern Cooking and is known as a “desperation pie” (i.e. when you only have staple ingredients like butter, sugar, eggs and flour on hand). That said, these few simple ingredients are greater than the sum of its parts and make for a seriously rich and satisfying dessert. Our friend Kathy who runs a large cattle ranch/horse farm in Texas recently whipped up one of these and was kind enough to share the recipe.

  • Yields: 8 Servings

Ingredients

1⅔ cup sugar

¼ cup flour

½ cup butter, softened

½ teaspoon salt

½ cup buttermilk

½ teaspoon vanilla

3 eggs

nutmeg

1 unbaked pie shell

Directions

1Preheat the oven to 350° F.

2Combine flour, sugar, butter and eggs; mix well. Add the buttermilk and vanilla. Pour into the unbaked pie shell. Sprinkle with nutmeg. Bake for 40 - 45 minutes or until it's golden brown and knife comes out clean.

I have not yet made this, but definately will tomorrow. These are ingredients which most of us have on hand, so I’ll give it a try. Sounds delicious & easy. Thank you Blythe!
