Broccoli Salad with Miso Paste

This Broccoli Salad with Miso Paste is a brilliant, deeply savory twist on the classic potluck staple. While traditional broccoli salads rely on a heavy, sweet-and-tangy mayonnaise dressing, this recipe incorporates miso paste, bringing a rich, umami complexity.

Ingredients

1 head broccoli, cut into florets

1½ tablespoons miso paste

1 clove garlic, finely minced

1 green onion, finely chopped

½ teaspoon sugar

1 teaspoon sesame oil

1-2 tablespoons water

1 tablespoon toasted sesame seeds

Directions

1Blanch the broccoli in boiling water with some salt for 3 - 4 minutes, or longer if you prefer. Drain and rinse well under cold water, and set aside.

2In a mixing bowl, combine the remaining ingredients and mix well. Add the broccoli and toss with the sauce. Serve at room temperature or chilled.
