This Brie, Chili Jam, Beets & Arugula Grilled Cheese is loaded with flavor and the perfectly delicious sandwich!

Yields: Makes 2 sandwiches
Ingredients
4 large slices rustic bread
chili jam
1 medium beet, cooked and sliced into thin rounds
2 tablespoons butter
4 slices whole grain bread
6 ounces brie cheese, sliced
handful of leaves arugula
Directions
1Spread the bread with chili jam, top with sliced beets, brie and arugula. Butter the outside of the bread.
2Heat a large skillet or griddle over medium heat.
3Place the sandwiches, butter side down, on the hot skillet pan or griddle. Grill for 2-3 minutes or until golden brown. Flip and cook on the other side until golden brown and the cheese has melted, about 2 more minutes. Serve immediately.
