Salad doesn't have to be boring, try Blueberry, Carrot, Almond & Spinach Salad. It's so colorful!
2 cups baby spinach
½ cup blueberries
½ cup matchstick carrots
¼ cup slivered almonds
2 green onions, minced
Vinaigrette
3 Tablespoons olive oil
1 Tablespoons white balsamic vinegar
1 teaspoon Dijon mustard
salt & pepper, to taste
1Combine spinach, blueberries, carrots, green onions and slivered almonds in bowl.
2Drizzle with vinaigrette.
