BLT with Basil Mayonnaise - If you grow tomatoes, you end up with a "boat load". My husband decided that we would have BLTs for dinner, which is a very good idea. My daughter took a bite and said "Whoa, that's bomb!" I am assuming that "bomb" is a good thing. I think it was by the look on her face! FYI - Adding slices of avocado wouldn't be a bad idea. Then it would be called a BLAT with Basil Mayonnaise.

BLT with Basil Mayonnaise

Ingredients

2 slices good-quality white bread

1 tomato, preferably heirloom

Iceberg lettuce

Basil Mayonnaise (recipe follows)

3 slices of smoked bacon

Basil Mayonnaise

1/4 cup packed basil leaves

1 medium garlic clove, chopped

1/2 cup mayonnaise

Directions

1Arrange bacon on a slotted foil lined baking sheet and bake to crisp, 20 minutes.

2Dry on paper towels.

3Toast the bread. Slice the tomatoes.

4Spread both pieces of bread with the basil mayonnaise. Top with the lettuce, tomato, and bacon. Place the other slice of bread on top and cut in half.

Basil Mayonnaise

1In a blender or small food processor, combine the basil, garlic and mayonnaise. Process until finely chopped and relatively smooth, scraping down the sides of the bowl occasionally. Store in the refrigerator for up to 2 days.

I know, but my 21 year old left the “the” out! I would add avocado for your “old lady”….

‘The bomb’ is a very good thing. (‘Bomb’ itself is usually a verb and it means … not so great.) We have a boatload of ‘maters as well as a nicely producing Basil plant. My old lady is a huge BLT fanatic. Love the mayo recipe! Gonna do it! (Yes, I said ‘old lady.’)
