Blondies with Butterscotch Chips

We had a recent cooking/drinking Zoom birthday party, and brownies were on the menu. Sadly, my husband can not eat chocolate, so instead, I made these Blondies with Butterscotch Chips. They are super easy to make, seriously good and you can also freeze them. Though, I gave most of them away to my daughter and her roommates!

  • Yields: Makes 24 bars

Ingredients

¾ cup unsalted butter, melted

1 cup light brown sugar, lightly packed

¾ cup granulated sugar

2 large eggs, room temperature

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup butterscotch chips or white chocolate, optional

Directions

1Preheat oven to 350° F. Grease a 9x13-inch baking pan, and set aside.


2In a large mixing bowl, whisk together the butter, brown sugar, and granulated sugar until well combined. Stir in the eggs and vanilla until fully combined.


3Whisk the flour, baking powder, and salt and then fold in the chips. Spread the batter into the prepared pan and spread it around into one even layer. 


4Bake at 350° F for 30 minutes or until the top is set and lightly browned. Remove from the oven and transfer the pan to a wire rack to cool completely before slicing into bars.


Storage

1Store leftover blondies in an airtight container at room temperature for up to 5 days.

Freezing instructions

1Blondies will freeze well for up to 3 months. Thaw overnight in the refrigerator and bring to room temperature before serving.
