Beef Ramen Bowls make a great weeknight meal. Ground beef gets sautéed with green onions and mixed with a sweet and spicy sauce. It's full of vibrant flavors, quick and inexpensive.

Ingredients
1 pound ground beef
3 green onions, thinly sliced, white and green parts separated
1 teaspoon garlic, minced
1 teaspoon fresh ginger, minced
2½ cups water
2 x 3-ounce packages, ramen noodles, flavor packets discarded
1 x 12-ounce package frozen stir-fry vegetable medley
3 tablespoons hoisin sauce
2 tablespoons less-sodium soy sauce
I tablespoon sriracha sauce
1 tablespoon packed brown sugar
1 tablespoon fresh cilantro, chopped, plus more for garnish
2 teaspoons sesame seeds, toasted
Crushed red pepper, for garnish
Directions
1Cook beef and white parts of green onions in a large skillet over medium-high heat until meat is no longer pink and onions are soft and translucent, about 5 minutes. Stir in the garlic and ginger and cook for 1 minute. Transfer mixture to a plate and drain fat from skillet.
2Add water to the skillet and bring to a boil. Add ramen noodles and frozen vegetables; cook, stirring occasionally, until noodles are tender, 3 to 5 minutes,
3Meanwhile, for sauce, stir together hoisin, soy sauce, sriracha, brown sugar, and 1 tablespoon cilantro in a small bowl until well combined.
4Return meat mixture to skillet and add sauce. Cook, stirring, until heated through, about 2 minutes. Garnish with sesame seeds, red pepper, green parts of green onion, and cilantro.
