I happen to love Banana's Foster. When I was pregnant with my first daughter, Zoe, I woke up one morning and said to my husband. "I want bananas foster." He then said that we would make it that evening. I then said, "No, you don't understand, I need it now!" It's really amazing that we had all the ingredients in the house. He granted my wish and it hit the spot! It's one of my favorite desserts. Zoe likes it too! Anyway, I have made Brennan's Bananas Foster, Bananas Foster Layer Cake, and Bananas Foster Upside-Down Cake. I guess you could say I'm a bit bananas! Anyway, I went further and made this I love

Yields: 6 - 8 Servings
Ingredients
Shortcake
2 cups flour
½ cup sugar, plus more for dusting
3 teaspoons baking powder
½ teaspoon salt
1 egg
½ cup butter
½ cup milk
Bananas
2 tablespoons butter
6 firm, ripe bananas
½ cup packed brown sugar
2 tablespoons dark rum
Directions
Shortcake
1Pre-heat oven 375° F.
2Grease an 8-inch round layer-cake pan.
3In a mixing bowl, combine flour, baking powder, salt, and sugar. Cut in butter with pastry blender or 2 forks until crumbly.
4Stir in milk and egg until just blended. Pat dough into prepared pan; dust with sugar and bake 30 minutes or until golden brown.
Bananas
1In skillet, melt butter on medium-high. Add bananas; cook 1 minute or until bananas begin to brown, stirring gently. Remove skillet from heat; stir in brown sugar and rum. Return skillet to heat; cook 1 minute or until mixture begins to simmer.
2To serve, slice the shortcake and top with the bananas.
