My husband made these Banana Butterscotch Muffins from Nigella Lawson's book, Nigella Express.Nigella says you can substitute white chocolate chips for the butterscotch chips, but her favorite is dark chocolate. Personally, I love the butterscotch.

Ingredients
½ cup vegetable oil
2 eggs
1⅔ cups all-purpose flour
½ cup sugar
1 teaspoon baking powder
½ teaspoon baking soda
1½ cups mashed bananas (2 - 3 ripe bananas)
1 cup butterscotch morsels
Directions
1Preheat your oven to 400° F. Line a standard 12-muffin tin with cupcake papers.
2Measure the oil into a large bowl and beat in the eggs.
3Put the flour, sugar, baking powder and baking soda into another large bowl and mix in the liquid ingredients, followed by the mashed bananas.
4Fold in the butterscotch morsels. Place an equal amount of batter in each of the muffin tins. Bake for 20 minutes, or until golden brown.
