Baked Tomatoes with Mozzarella, Parmesan and Basil

These Baked Tomatoes with Mozzarella, Parmesan and Basil are basically Caprese tomatoes. They are simple and easy to prepare and then are ready in 10 minutes.

  • Yields: 4 Servings

Ingredients

4 tomatoes, cut in half

1 cup mozzarella cheese, shredded

1 cup parmesan cheese, shredded

½ cup fresh basil, chopped

olive oil

Directions

1Preheat oven to 400° F.

2Place tomato slices on a parchment-lined baking sheet.

3Top each tomato with a layer of parmesan and then a layer of mozzarella.

4Sprinkle the chopped basil on top of each tomato.

5Drizzle lightly with olive oil.

6Bake for 8 - 10 minutes or until cheese is melted and bubbly.

7Turn off oven and broil for 2 - 3 minutes to brown the cheese.

8Serve immediately.
