People love baby versions of vegetables. This Baby Zucchini Sautéed with Garlic & Balsamic is quick, easy and very flavorful.
12 ounces baby zucchini, sliced in half lengthwise
3 tablespoons balsamic vinegar
2 tablespoons olive oil, divided
2 large cloves of garlic, minced
salt and ground black pepper, to taste
1Whisk together the balsamic vinegar and 1 tablespoon oil. Toss in the garlic, salt and pepper and whisk again.
2Place the zucchini in a ziplock bag, pour the vinaigrette on top and marinate for 30 minutes or more.
3Heat the remaining tablespoon of oil in a skillet over medium heat.
4Sauté the zucchini for 3-4 minutes, tossing frequently and serve.
