Avocado Toast

Avocado Toast seems to have come from Queensland, Australia in the mid-1970s. In 1962, a New York Times article showcased an "unusual" way to serve avocado as the filling of a toasted sandwich. If you love avocados, this is one of the best ways to eat them.

  • Yields: 4 Servings

Ingredients

1 ripe avocado, halved, pitted and peeled

½ tablespoons lemon juice

Fine salt and freshly ground black pepper

4 slices whole grain or whole wheat bread

1 clove garlic, peeled and halved

2 tablespoons extra-virgin olive oil

Flaky sea salt, for serving

Crushed red pepper flakes, optional

Directions

1Mash the avocado and lemon juice with a fork in a shallow bowl until chunky. Season with fine salt and black pepper.

2Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic.

3Lightly brush the toasts with oil, and season with fine salt and pepper.

4Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

Smashed Avo on toast is an Australian staple, we eat it all the time – a little crumbled Feta is a nice addition.
