Egg Salad is one of my favorite things to have for lunch. Whenever we go to a diner, that is always what I order. I saw this Avocado Egg Salad Toast and had to try it. You use avocado to bind it together instead of traditional mayo. It's very good!

Yields: 4 Servings

Ingredients

1 medium ripe avocado, peeled and cubed

6 hard-boiled large eggs, chopped

1 green onion, finely chopped

1 teaspoon lemon juice

salt and pepper, to taste (I used Lemon Pepper)

4 large slices sourdough bread, halved and toasted

Directions

1In a large bowl, mash avocado to desired consistency. Gently stir in eggs, green onion, lemon juice, salt and pepper. Spread over toast. Serve immediately.

Yum! I feel the same about egg salad, my standard sandwich order in a diner. This looks delicious, though I may not be able to resist adding at least a spoonful of mayo.
