My sister-in-law Rhonda is in town from the UK and her friend Steve came over and told me about this Artichoke, Parmesan Chicken Bake. It took five minutes to prepare and it was SO good! I'll be making this again.

Yields: 4 Servings
Ingredients
1 (14 ounce) can water-packed artichoke hearts, well drained and chopped
¾ cup parmesan cheese, grated
¾ cup mayonnaise
1 dash garlic powder or 2 garlic cloves
4 boneless skinless chicken breast halves
Directions
1Preheat oven to 375° F.

3Spray a 11x7 inch baking dish with oil.

5Salt and pepper the chicken breast halves and place in the dish.

7In a bowl, combine the artichoke hearts, parmesan cheese, mayonnaise and garlic powder; mix well.

9Spread artichoke mixture over chicken breasts.

11Bake, uncovered, 35-40 minutes or until chicken juices run clear.
