Apple Tart with Rosemary & Honey Syrup

This Apple Tart with Rosemary & Honey Syrup is easy to make with frozen store-bought puff pastry. The rosemary-infused honey drizzled on at the end really adds complexity to this simple tart.

Ingredients

½ (400g) package puff pastry, thawed

¼ cup unsalted butter, softened

1 egg yolk

¾ cup almond meal

1 teaspoon vanilla

½ cup runny honey, divided

2 Pink Lady apples, very thinly sliced

⅓ cup runny honey

1 rosemary sprig, leaves picked

ice cream, to serve

Directions

1Preheat oven to 400° F.

2Roll out the puff pastry on a lightly floured surface with a lightly floured rolling pin to approximately an 8 X 10-inch rectangle.

3Place on a parchment-lined baking sheet. Score a 1-inch border around the outside of the pastry with a knife. Prick the center of the pastry all over using a fork. Bake in preheated oven for 10 minutes until par-baked.

4Place butter, egg yolk, almond meal, vanilla and ¼ cup honey in a bowl and beat with a wooden spoon until smooth. 


5Spread over pastry and arrange apple slices on top. Drizzle with ¼ cup honey. Bake for 20 minutes or until golden and crisp. 


6Place the rosemary and remaining ⅓ cup honey in a pan over low heat, swirling to melt honey, then pour over tart. Serve with ice cream.
