Apple Butter–Glazed Chicken Meatballs with Crispy Shallots

Tender, simmered chicken meatballs coated in a glossy apple butter glaze and topped with crispy fried shallots make these Apple Butter–Glazed Chicken Meatballs one of my absolute favorite recent dinners. Served over a bed of creamy mashed potatoes (I use premade store-bought mash!), this sweet and savory 45-minute dinner hits every single note.
The secret lies in the pan sauce: apple butter delivers a rich, concentrated fruitiness, while Dijon mustard, Worcestershire, and apple cider vinegar cut through the sweetness to build a perfectly balanced flavor profile.

Ingredients

½ cup panko

⅓ cup whole milk

2 shallots, thinly sliced (about 1 cup)

½ cup neutral cooking oil

1½ teaspoons kosher salt, divided

1 large egg

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon fresh thyme, chopped

½ teaspoon black pepper, plus more for garnish

1 pound ground chicken

¾ cup chicken stock

½ cup apple butter

4 teaspoons Dijon mustard

1 tablespoon apple cider vinegar

2 teaspoons Worcestershire sauce

2 tablespoons cold unsalted butter, cut into pieces

Mashed potatoes, to serve

Chopped fresh chives, for garnish

Directions

1Stir together panko and milk in a large bowl. Let stand 5 minutes. 


2Meanwhile, place shallots and oil in a small saucepan. Cook over medium, stirring frequently, until lightly golden brown and crisp, 15 to 18 minutes. Using a slotted spoon, transfer shallots to a paper towel–lined plate. Sprinkle with ¼ teaspoon salt. Reserve shallot oil in saucepan. 


3Stir egg, onion powder, garlic powder, thyme, pepper, and remaining 1¼ teaspoons kosher salt into panko mixture until combined. Add chicken, and gently mix just until incorporated. Cover and refrigerate until mixture is firm enough to shape easily, about 15 minutes. 


4Shape mixture into 16 (about-2-tablespoon) meatballs. Heat 2 tablespoons of reserved shallot oil in a large nonstick skillet over medium. Add 8 meatballs, and cook, turning every 1 to 2 minutes, until browned on all sides and nearly cooked through, 7 to 8 minutes. Transfer meatballs to a plate. Repeat with remaining 8 meatballs. Do not wipe skillet clean. 


5Add chicken stock, apple butter, Dijon mustard, apple cider vinegar, and Worcestershire sauce to skillet. Bring to a simmer over medium. Cook, scraping browned bits from bottom of skillet, until sauce is glossy and reduced slightly, 3 to 4 minutes. 


6Return meatballs and any accumulated juices to skillet. Simmer, turning meatballs occasionally, until meatballs are cooked through and coated in sauce, about 2 minutes. Remove from heat. Push meatballs to one side, and whisk in butter, 1 piece at a time, until butter is melted and sauce is smooth and glossy. 


7Serve meatballs and sauce over mashed potatoes. Top with crispy shallots, chopped fresh chives, and black pepper. 


Make ahead

1Prepare the meatball mixture up to one day in advance and refrigerate until ready to shape and cook. The crispy shallots can also be made one to two days ahead and stored in an airtight container at room temperature.
