Amish Yummasetti

I have been cooking a lot for my elderly father and his wife. Many times he does not like what I make. This however, knocked it out of the ballpark. It's everything you want in a bowl. It's filling, comforting and really delicious. I think kids would like it too.

Amish Yummasetti is a classic Amish dish, that is usually made into a casserole this is the dump it together in a pot version. The name "Yummasetti" is thought to be a playful combination of "yummy" and "spaghetti," though spaghetti is not a part of this dish! Traditionally, the Amish would make handmade noodles and cream of mushroom soup, though many have relented to use ready made. Who has time for that?

Ingredients

1 tablespoon butter

1½ tablespoons flour

1 pound lean ground beef

½ cup onion, diced

2 cups egg noodles

2 cups peas

1 can mushroom soup

14.5 ounce can diced tomatoes

1 cup shredded Cheddar cheese

Salt and sugar, to taste

Directions

1Boil the noodles 1 minute less than the package instructions.

2Add the butter in a pan over medium heat, then add the flour to the butter, and whisk for 1 minute. Then add the ground beef and onion and cook until no longer pink.

3Drain the noodles and add it back to the pot with the ground beef, peas, mushroom soup, tomatoes, salt and sugar to taste. Then, heat it all back up until almost boiling. Finally, pile on the cheese and let rest until it’s melted.
