Irish Funeral Sandwiches
This recipe for Irish Funeral Sandwiches popped up in my inbox. It's sort of - if an egg salad sandwich (my favorite sandwich!) met up with a club sandwich. I literally made it 10 minutes later and let me tell you it's absolutely delicious. Apparently, Irish funeral sandwiches have been a staple at wakes and funerals across Ireland to offer comfort and sustenance to mourners during a difficult time. Gnocchi with Sauerkraut and Ham
I made this Gnocchi with Sauerkraut and Ham while staying with my mom. She loves sauerkraut, so I concocted this combination of gnocchi and ham and she loved it. You can boil, sauté or, air-fry the gnocchi. I choose to air-fry mine. Either way, it's a very simple and delicious dish.

Chicken Cordon Bleu
Contrary to popular belief, Chicken Cordon Bleu isn't French. It likely originated in Switzerland around the 1940s. The first documented recipe appeared in a Swiss cookbook in 1949. It is based on schnitzel, a thin, breaded cutlet, filled with cheese in this case. Most recipes roll the ham and cheese in the chicken. This recipe puts the ham, cheese and bread crumbs on top and it gets baked in the oven, which makes it way easier. It’s served with this Parmesan-Dijon Cream Sauce sauce, which makes this dish outstanding.

Columbia’s 1905 Salad
Columbia's 1905 Salad is from Florida's oldest restaurant in Tampa, and the oldest Spanish restaurant in the United States, called Columbia Restaurant. The restaurant opened in 1905, but this famous salad wasn't "invented" until 1940 by waiter Tony Noriega. He made it using leftover Spanish and Italian ingredients from the kitchen. The Columbia’s legendary salad is tossed tableside. They are the biggest restaurant consumer of Lea & Perrin’s Worcestershire sauce in the country, which is the “secret sauce” in the dressing recipe.

I made this Leek and Potato Soufflé With Ham and Fontina. We have made Gruyère Cheese and Chive Soufflé for over 32 years. This leek and potato version is less of a soufflé and more of a fluffy potato dish. The leeks and ham elevated the flavor of the potatoes. Cheesy Ham & Potato Casserole
I have a terrible habit of putting food in my freezer and then not using it. They other day, we had "nothing" in the fridge to eat, so after rummaging through my freezer I found some ham and made this Cheesy Ham & Potato Casserole.
