Baked Broccoli Polenta with Roasted Mushrooms

I saw this recipe for Baked Broccoli Polenta with Roasted Mushrooms in Saveur magazine. I have to say, it was outstanding. You make the polenta, stir in roasted broccoli and grated Parmesan and put it in a loaf pan, refrigerate over night.  Then it's sliced and roasted  and serve with roasted mushrooms. It calls for maitake mushrooms, but I used cremini mushrooms. This would be a great addition to your holiday meal for your vegetarian guests or all guests! Oh, and it's gluten free!

Ham Shepherd’s Pie

I made this Ham Shepherd’s Pie because I had some random ingredients in my fridge. If you don't have a leek, use an onion. The recipe can be adapted to what you have on hand. The best part is the cheesy mashed potato topping. What's not to love?

Potatoes au Gratin from Todd Coleman

The thing about Potatoes au Gratin is that it takes forever to make and you have to do it at the last minute. This recipe is totally make ahead-friendly. You can even prepare it the night before, which I will find very helpful for the upcoming holidays.

Sicilian Meat Roll

My mother gave me a handwritten recipe book in 1981 with family favorites. I opened it the other day and saw this recipe for Sicilian Meat Roll. It's basically Italian meatloaf. Personally, I am not a fan of meatloaf, but I made it for my father. It turned out really delicious. It definitely needs to be served with some marinara sauce. It's ground beef rolled up with ham, though I used prosciutto, and mozzarella.

Caprese Pesto Pasta Bake

Caprese salad is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and basil. Like pizza Margherita, it features the colours of the Italian flag: green, white, and red. This Caprese Pesto Pasta Bake is taking all those ingredients with some pesto and mixing it with pasta. You can make it ahead and bake it later in the day.

Zucchini Butter Spaghetti

This Zucchini Butter Spaghetti is incredibly delicious. If you are wondering how to use all of your homegrown zucchini, this is it! Grated zucchini is cooked down with butter and garlic and tossed with parmesan cheese and fresh basil. It's so simple, yet bursting with flavor.

Tomato & Goat Cheese Crostata

This Tomato & Goat Cheese Crostata is from Ina Garten's latest cookbook Modern Comfort Food. It's easy to make and very versatile. Truth be told, I didn't have goat cheese or leeks, so I used Gruyère and a shallot. You can use what you like, however, the pastry must be made exactly as written. It's the flakiest crust ever, which is due to the amount of ice-cold butter!

Cheesy Chicken & Broccoli Rice Casserole

Over the years, I have had many personal chef clients. I cook many different meals and package them up for the freezer. This Cheesy Chicken & Broccoli Rice Casserole is something I made recently. This can also be made in one large casserole and it freezes really well.

Crabbies

Last month we spent the weekend in La Quinta, California and had a lovely time seeing our friends at their home in Palm Desert. Judie made wonderful hors d’oeuvres, which included these Crabbies. She was kind enough to send me the recipe. The recipe has been around for years, though no one seems to know where it originated. It calls for a jar of Kraft Old English Cheese, which is a key ingredient. If you can’t find it at your local market, you can buy it online. The beauty of this recipe is that it makes a large amount that you can keep in your freezer and pull as many out as needed and bake until golden.

I make a similar hors d’oeuvres called Curried Shrimp Croustades.

Cheesy Ham & Potato Casserole

I have a terrible habit of putting food in my freezer and then not using it. They other day, we had "nothing" in the fridge to eat, so after rummaging through my freezer I found some ham and made this Cheesy Ham & Potato Casserole. You could make it your own by adding any vegetables you have on hand.

Note to self - I really need to have a running list of what's in my freezer with a use by date!
