Parmesan Tilapia

This Parmesan Tilapia is easy and quick to prepare. I know cheese doesn't usually go with fish, but this works.

These Green Chile Chicken Enchiladas have much less fat than most enchiladas. This recipe uses hot chicken broth rather than oil to soften the tortillas.

24 Hour Salad

There are many versions of this 24 Hour Salad. It's perfect to bring to a potluck. Up to 24 hours before you plan to serve the salad, layer a large bowl in the exact order given. I have learned 2 tricks from Martha Stewart over the years, one is how to hard boil an egg perfectly (bring eggs to a boil, boil for 1 minute, remove from heat and cover for exactly 13 minutes), the second thing is you pour the dressing in the bottom of a salad bowl, put the salad ingredients on top and toss right before serving. This is also a great way to bring a salad to a potluck.

Parmesan Crusted Potatoes

I made these Parmesan Crusted Potatoes for dinner. I actually put them in the oven for about 25 minutes before dinner, then I put them back in right before serving. They are really good and easy to make.

Toasted Brie & Mushroom Open Faced Sandwich

I had this wonderful Toasted Brie & Mushroom Open Faced Sandwich at The Little Flower Candy Company in Pasadena, CA. I don't think of using lemon with mushrooms, but it really works to add a brightness to the dish.
This is what is says on the menu:
garlic mushrooms and brie toasted and served open faced on baguette with fresh thyme and lemon zest
