Beef & Vegetable Pot Pie
This pot pie is from Cooking Light magazine and is low in fat and calories. It's easy and relatively fast to make, which makes it a perfect weeknight meal.

Sausage, Kale & White Bean Skillet Casserole
I made this really simple one pot dinner. The original recipe called for chard, but I changed it to kale, since it's such a super food. Don't get me wrong, chard is good too. I will definitely be making it again.

Classic Baked Macaroni & Cheese
Every Monday, I make Macaroni & Cheese for a school, for 11 years. I can only image how much macaroni I've boiled - 10 lbs per week. I guess you could say that I'm fairly good at it. However, this recipe is NOT the school recipe. That one is done on the stove top and this recipe is baked with breadcrumbs. Let's face it, there is nothing better than mac n' cheese.

Scalloped Potatoes & Ham
This is what I made for dinner last night. Talk about comfort food! I remember growing up we used to eat a lot of scalloped potatoes. Brings back memories of my childhood. I'll be making it again.

Cowboy Casserole
Here is a recipe that we've been testing for our hot lunch program. This is the kids version. I think I would throw in some chopped green chilis!I hope they like it!

Chicken Enchilada Casserole
This is one of our family's Mexican comfort food recipes. I made it easier by cutting up the tortillas instead of rolling them. I also soften the tortillas in the microwave to avoid frying them in oil.

Cheesy Cauliflower Gratin
Cheesy Cauliflower Gratin - YUM! As you may have guessed, I love cauliflower. I think I have posted about 14 other cauliflower recipes. This one is wonderfully creamy and cheesy. You can also top this with ½ cup freshly grated Parmesan mixed with ¼ cup fresh bread crumbs instead of Saltines.

Southwest Breakfast Strata
I have a house full of relatives and I needed an easy breakfast option. Usually, I would make this with corn tortillas, but I liked the flour tortilla option. I have slightly tweeked this recipe. I made this the night before, which makes it so easy in the morning. All I have to do is stumble to the coffee maker and take it out of the fridge. (actually my husband does the stumbling)

Sausages with Herbed Beans
This is a great weeknight meal. It's very similar to cassoulet, which is a rich, slow-cooked casserole originating in the south of France, containing sausage and other meats. The beauty of this recipe is that unlike cassoulet, it cooks very quickly. I sent my husband, Eric, the shopping list via text message, he actually bought already cooked Portuguese smoke cured sausage seasoned with garlic and paprika. I thought it wouldn't work, but it was really delicious and I will be making this again.

Lemon & Thyme Potato Gratin
I made this Lemon Thyme Potato Gratin for a client (which I will have to admit, I had never made before!). She called me a week later and said it was the best potato gratin they had ever had, and can I make it again for a party using her pan. It's based on a Martha Stewart recipe. I used cream instead of milk - maybe that's why it was so good! Unfortunately, I did not take a picture of the final product because I delivered it par baked...
