Here's another socially distant dinner I made in my Instant Pot on my Dad's porch. You can also make this layered  Burrito Pie in the oven. It's everything in a burrito - meat, refried beans and cheese that are stacked up with tomatoes and baked.

Meatloaf Pie

We have been having socially distant dinners on my Dad's porch. I bring my Instant Pot and plug it in outside. The neighbors always come and ask what I'm making! After making Lasagna, which was a huge hit, I wanted to come up with more things I can make in my 6" removable bottom pan. I love the fact that you can easily slice it into pie shaped wedges. You can also make this in the oven with the same pan. The recipe has a topping, but my Dad just likes ketchup on the side.

Aunt Bambi’s Chile Colorado

My friend Chris, whose family calls her “Aunt Bambi” (there must be an interesting story there!), had us for a socially distant dinner in her backyard and made this incredible Chile Colorado. By the way, Colorado has nothing to do with the state of Colorado. Colorado is of Spanish origin, meaning "colored red.” Chile Colorado (sometimes spelled Chili Colorado) is a Mexican dish featuring a red sauce and tender pieces of beef. There is a small amount of chocolate in it and is typically eaten with beans, rice, and tortillas.

Instant Pot Lasagna

I made this Instant Pot Lasagna using my 7” Fat Daddio's Round Removal Bottom Cheesecake Pan. I have to say, it was the best lasagna I have ever made. I have also included the oven instructions if you do not have an Instant Pot / Pressure Cooker. I love the way it looks and it's so much easier to serve sliced into pie-shaped wedges.

Venetian-Style Sweet-and-Sour Ragù

My husband and I spent the day making meat sauces for the freezer. We made this Venetian-Style Sweet-and-Sour Ragù, which I have to say is about the best meat sauce EVER! I made it in the Instant Pot, but have also included the stovetop instructions. You can put it on pasta, but we put it on a sliced ciabatta, fresh mozzarella, golden raisins, and crispy fried sage leaves. You put it under the broiler and OMG!!! The flavor is absolutely incredible.

Bacon Cheeseburger Flatbread Pizza

I met my friend Melanie for happy hour last week and she insisted we order a Bacon Cheeseburger Pizza. It's nothing I would have ordered, but we did and it was so good that I recreated it at home for my husband, mainly because it has pickles on it (I had him at pickles!). It's easy and fast to make using a store-bought flatbread. Suspend your disbelief and just try it.

Instant Pot Chili

I have many chili recipes, but this is my new favorite. I have given the Instant Pot instructions and also the stovetop instructions. The addition of a small amount of cocoa powder adds a subtle depth of flavor.
