The Gooden Salad
There is a restaurant offering The Gooden Salad, named after a local school in Sierra Madre, CA. It is a delicious combination of grilled chicken, lettuce, hearts of palm, avocado, corn and blue cheese served with ranch dressing and a drizzle of BBQ sauce.

BLT Salad
With the plethora of tomatoes from the garden, I have been making BLT salads for dinner. I make a dressing out of mayo and lemon juice, croutons, iceberg lettuce, bacon, tomatoes and you’ve got a great summer salad. Sometimes I put in an avocado, which makes it a BALT salad.

Potatoes with Bacon, Apples & Onions
Eric, my husband, was in charge of the side dish to go with the Pork Chops with Figs in Hard Cider. He dug around in the larder and came up with this stellar starchy side!

Pasta with Cannellini Beans, Bacon and Kale
Don't you hate those days when you have no idea what to make for dinner? This is one of those meals I created out of what was in the pantry and fridge. You can substitute any number of things - like chickpeas and spinach, for example. I always try to have many kinds of beans on hand.

Bacony Peas
Bacony Peas - Have you noticed that I love bacon? This is dead easy and delicious. It produced many contented smiles around my table.

Avocado, Bacon & Basil Pasta
Avocado, Bacon & Basil Pasta - My 15 year old daughter, Grace, texted me yesterday morning and asked if she could make dinner. She even sent a shopping list. Absolutely! I love everything about this recipe. It was delicious. My other daughter, Zoe, is going to be mad when she reads this from her college dorm with no kitchen... If you are nice, Grace might make it for you when you get home! She also did wonderful mis-en-place (a French term that literally means, "setting in place", used in cooking to describe all the prep and gathering of ingredients)!

Broccoli Slaw
I bought a bag of broccoli slaw. I love regular coleslaw, but I think I like this better. You could use toasted almonds, cashews, sunflower seeds instead of pistachios. The bacon is also optional. I actually did't put bacon in mine, too lazy.

Clementine, Burrata & Proscuitto Salad
Clementine, Burrata & Proscuitto Salad is an unexpected way to serve burrata cheese. Burrata is one of my favorite cheeses, which is a fresh Italian cheese, made from mozzarella and cream. The outer shell is solid mozzarella while the inside contains both mozzarella and cream, giving it an unusual, soft texture. The name "burrata" means "buttered" in Italian. Usually, one encounters burrata accompanied by tomatoes, basil and or pesto. I was lucky enough to tour Angelo & Franco - The Mozzarella Guys cheese facility a few years ago. They make amazing authentic Italian cheeses.

Saturday Salad
My brother-in-law, Russell, sent me this Saturday Salad recipe that he made. Little did he know, I've made this salad for years. It's one of my all time favorites. I prepare everything ahead in the morning. It's from “The Cuisine of California” by Diane Rossen Worthington, which was given to me by my friend Barbie. The chicken breasts are first marinated and then baked, and the juices from the baked chicken are used as the basis the fragrant vinegar-garlic dressing.

BLT with Basil Mayonnaise
BLT with Basil Mayonnaise - If you grow tomatoes, you end up with a "boat load". My husband decided that we would have BLTs for dinner, which is a very good idea. My daughter took a bite and said "Whoa, that's bomb!" I am assuming that "bomb" is a good thing. I think it was by the look on her face! FYI - Adding slices of avocado wouldn't be a bad idea. Then it would be called a BLAT with Basil Mayonnaise.
