Super Easy Mac & Cheese

Super Easy Mac & Cheese is perfect to get your kids involved in dinner. One of the things I am passionate about is getting kids interested in cooking. Over the years, I have taught many kids how to make simple meals. They can learn math skills, practice fine-motor coordination, make choices about nutrition, and practice basic cooking techniques. They can learn about different countries and traditions by making foods from around the world. It's also a great way to get families together in the kitchen. If you get kids cooking at an early age, chances are they will continue this good habit as they grow. I happen to collect Macaroni & Cheese recipes. I ran across this one and thought it would be perfect for kids to make. Just make sure you are there to help or supervise the pasta boiling part!

Smashed Pea and Barley Soup

This Smashed Pea & Barley Soup is my friend's favorite soup from the California Pizza Kitchen. I found the recipe and made it. I really don't like pea soup in general, but this one was very good. It's completely vegetarian as well!

Cornbread and Sausage Stuffing

This Cornbread Stuffing is another side dish for Christmas dinner. I think it goes nicely with ham, though I guess it should not be called stuffing due to the fact that it is not stuffed into anything!

Chipotle Cranberry Sauce

Smoky Savory Cranberry Sauce
One of my clients requested a spicy cranberry sauce. This sauce has chipotles in it which gives it a smoky, savory quality. Unlike most cranberry sauces, this one doesn’t require any added liquid.

Indian Pudding

Indian Pudding is not hugely popular, especially in the Western United States. In fact, I bet you that most people have never heard of it. The recipe came from the North East – Maine, New Hampshire and Massachusetts. It is very easy to make and extremely low budget. When you put vanilla ice cream on top, it becomes a marriage made in heaven. If you ever get really cold and can’t seem to warm up, make this dish!
