My father has been going through some major health issues and needs to eat more. We were out at a restaurant and he ordered Lamb Chili, which he absolutely loved. I decided to make him a big pot of it and have included two methods - stovetop and Instant Pot. This was definitely a labor of love given that I really hate lamb!

Well, for starters, I'm not a huge football fan. I only watch the Super Bowl for the ads and typically root for the team that is winning. I'm only half paying attention, though I do provide good snackage! Tuscan White Bean and Lentil Soup

This Tuscan White Bean and Lentil Soup is easy and quick to make. It can be made in an Instant Pot, a Slow Cooker or on the stovetop. This soup calls for the rind of Parmesan cheese. The rind adds a robust flavor. You should never throw out the rinds. I keep them in a ziplock bag in the freezer. You can use it for soups, stews, risottos, tomato sauce, etc.

Vaquero Bean Soup

I love using a leftover ham hock to make soup. I also happen to have some Rancho Gordo Vaquero beans. If you don't know about Rancho Gordo, then you need to check them out. You can substitute other beans for this soup, like black beans. I have given you the recipe for 3 cooking methods - Instant Pot (which is what I did), Slow Cooker or stovetop. Before serving, I love adding a splash of sherry vinegar, which brightens it up and add a burst of flavor.

I made this Butternut Squash Soup with Cannellini Beans, Ham and Swiss Chard with leftover ingredients I had In my fridge. Here are two ways to make it - on the stovetop or in the Instant Pot. You could also purée a few cups of it to make it a creamy soup. Serve it with some good crusty bread and a salad. I love butternut squash, which has more potassium than a banana. Its benefits are too many to mention!

Beef Stew with Mushrooms and Barley

I made this Beef Stew with Mushrooms and Barley for my Dad the other day. You can make it in an Instant Pot / Pressure Cooker or, I have also included the stovetop instructions. There are a few sprigs of rosemary and thyme in this stew which makes it very flavorful. I love the addition of pearl barley, which is one of the oldest grains. It is chewy, nutty, hearty and acts as the perfect thickener for soups and stews.

Autumn Pumpkin Turkey Chili

I decided to make this Autumn Pumpkin Turkey Chili so that I could jumpstart my favortite time of year. I overheard my husband talking to my daughter on the phone saying that "Mom is making some kind of weird chili that invovles a can of pumpkin purée". I have to say when I was shopping for ingredients for dinner, I was on the fence as to whether to use chunks of pumpkin/butternut squash instead. I decided to try it. My husband said it was delicious and went back for seconds!

I have provided 3 different methods of making this dish - stovetop, slow cooker and Instant Pot. It's the perfect thing for a chilly night, which I can only dream about living in LA. It is supposed to top 100° F this weekend!

Burrito Pie

Here's another socially distant dinner I made in my Instant Pot on my Dad's porch. You can also make this layered  Burrito Pie in the oven. It's everything in a burrito - meat, refried beans and cheese that are stacked up with tomatoes and baked.

Meatloaf Pie

We have been having socially distant dinners on my Dad's porch. I bring my Instant Pot and plug it in outside. The neighbors always come and ask what I'm making! After making Lasagna, which was a huge hit, I wanted to come up with more things I can make in my 6" removable bottom pan. I love the fact that you can easily slice it into pie shaped wedges. You can also make this in the oven with the same pan. The recipe has a topping, but my Dad just likes ketchup on the side.
