Freezer-Friendly Egg Cups
I've been making a lot of different things for the freezer. I cook all the time, but sometimes I just don't feel like it. These Freezer-Friendly Egg Cups are basically like the Sous-Vide eggs you get at Starbucks. This recipe is very versatile and can be made with many different ingredients. For instance, I used bacon and Gruyère cheese, but you could easily make this vegetarian by using chopped up cherry tomatoes, cheddar (or pepper jack) and fresh basil, etc. Look through you fridge and come up with your favorite combination. I made mine in the Instant Pot with a silicone mold, but I have also included the instructions for your oven. You just take them out of the freezer and microwave for 1½ minutes and voilà, you have breakfast!

I have to admit they were incredible. The fresh citrus gives it a wonderful tart flavor which works really well with the sweetness of the beets.

Amish Cheese Pennies
Amish Cheese Pennies are a cheesy cracker popular in the 1950's. These have few ingredients and are bound only by butter and cheese. You are supposed to roll them out to the diameter of a quarter. So why are they called cheese pennies!? The nice thing is the recipe makes 4 rolls that you can keep in the freezer and make them whenever someone stops by, which, let's face it, is unlikely to happen any time soon!

Ginger Ale Pork Chops
If you are a fan of ginger, you must try these Ginger Ale Pork Chops. It literally couldn't get any more ginger-y! It has powdered ginger, ginger ale, fresh ginger, and crystallized ginger. It's a tad sweet because of the ginger ale (NO, do not use diet ginger ale!), but it's delicious and topped off with walnuts and golden raisins.

White Beans with Broccoli Rabe and Lemon
I love broccoli rabe, which is also known as rapini, and I am always trying to find new ways to make it. This White Beans with Broccoli Rabe and Lemon recipe is really good. You fry the slices of lemon and garlic in olive oil before adding the broccoli and beans. The recipe calls for anchovies, but I didn't have any, so I left them out. I know some people will be outraged, but "tant pis", which means TOO BAD in French (and happens to be the name of our family cat!).

Roasted Tomatillo Salsa
The tomatillo, also known as the Mexican husk tomato, is a plant of the nightshade family bearing small, spherical and green or green-purple fruit of the same name. Tomatillos originated in Mexico and were cultivated in the pre-Columbian era. They have a tangy, almost citrus flavor and are used in many, Mexican green sauces. My husband roasted the tomatillos, onions, chile and even the garlic on the grill before blending. This gives this sauce a rich, earthy depth of flavor. It's an absolutely delicious sauce.

Slow Cooker Chicken Tinga
My daughter Zoe made Slow Cooker Chicken Tinga. I wish I could have been there to try it! Chicken Tinga is a Mexican dish made with shredded chicken in a sauce made from tomatoes, chipotle chilis in adobo, and sliced onions. You can use it on tostadas, quesadillas, tortillas. Top it with avocado, red onion, cilantro, and maybe even some crumbled cheese, like cotija or queso fresco.
