Broccoli Slaw

Broccoli Slaw

I bought a bag of broccoli slaw. I love regular coleslaw, but I think I like this better. You could use toasted almonds, cashews, sunflower seeds instead of pistachios. The bacon is also optional. I actually did't put bacon in mine, too lazy.

Sloppy Bombay Joes

A friend of mine told me about Aarti Sequeira's sloppy joe recipe. It's a sloppy joe with an Indian twist. I consider myself a sloppy joe expert, given that I have made them for hundreds of school children for almost 16 years. These are really delicious and different and actually a bit healthier using ground turkey. I served them with Broccoli Slaw. You've really to try these!

Clementine, Burrata & Proscuitto Salad

Clementine, Burrata & Proscuitto Salad

Clementine, Burrata & Proscuitto Salad is an unexpected way to serve burrata cheese. Burrata is one of my favorite cheeses, which is a fresh Italian cheese, made from mozzarella and cream. The outer shell is solid mozzarella while the inside contains both mozzarella and cream, giving it an unusual, soft texture. The name "burrata" means "buttered" in Italian. Usually, one encounters burrata accompanied by tomatoes, basil and or pesto. I was lucky enough to tour Angelo & Franco - The Mozzarella Guys cheese facility a few years ago. They make amazing authentic Italian cheeses.

Herbed Steamed Rice

Herbed Steamed Rice

Herbed Steamed Rice - the fresh herbs really add a wonderful bright note to this rice. Every time I make something with tarragon, it's like I've used a mystery herb. Tarragon was very popular in the late 70s early 80s, but isn't used much now. This rice pairs well with Lyonnaise Chicken with Vinegar Sauce.

Cucumber Pineapple Shrimp

Cucumber Pineapple Shrimp

Cucumber Pineapple Shrimp is a really simple and refreshing combination of flavors and makes a wonderful party appetizer. When I cater a party, I usually serve several hors d'oeuvres. I always like to serve some hot and some cold.

Israeli Couscous with Dried Cranberries, Apricots & Currants

This Israeli Couscous with Dried Cranberries, Apricots & Currants is such a colorful salad. I used Traders Joe's Harvest Grains Blend, which has a little bit of orzo, baby garbanzo beans and quinoa in it. You can just used plain Israeli couscous.

Pasta with Artichokes & Lemon Cream Sauce

As you may have gathered, our family likes anything that's lemony and contains artichokes. I used a bag of frozen artichoke hearts and Trader Joe’s Lemon Pepper Pappardelle pasta.

Purple Baby Artichokes in White Wine and Garlic

These beauties just came from the farmers market. The baby Purple artichoke is more properly and commonly known by its given name, Fiesole. They are easy to prepare, cook and eat because they haven’t developed the fuzzy portion of the choke in the center.

Spanish Roasted Potatoes with Tomato Sauce

I am always looking for new ways to make potatoes. "Patatas Bravas" is a classic Spanish tapas dish and is served in bars all over Spain. The sauce has a slight bite from the Tabasco, hence the name bravas, which means "fierce." They are also called "angry" potatoes. You can serve them with toothpicks as a snack or as a side dish.
