Rustic White Bean Soup With Spinach & a Ham Hock

I made 5 hams over the holidays for various parties that I catered. Cleverly, I froze all the ham hocks. I pulled one out a made this white bean soup, throwing it all the the crockpot. The ham hock I used was particularly meaty, so I did not add additional ham. Also, I served it with grated Parmesan cheese and crusty bread.

My daughter, Grace, made this Gazpacho. It was her mission. Gazpacho is probably the last thing she would ever eat, which proved to be true. She never even tasted it. Saturday Salad

My brother-in-law, Russell, sent me this Saturday Salad recipe that he made. Little did he know, I've made this salad for years. It's one of my all time favorites. I prepare everything ahead in the morning. It's from “The Cuisine of California” by Diane Rossen Worthington, which was given to me by my friend Barbie. The chicken breasts are first marinated and then baked, and the juices from the baked chicken are used as the basis the fragrant vinegar-garlic dressing.

Roasted Balsamic Potatoes, Onions and Broccoli

Some of my best recipes have come off the packages of products. This one I found on the side of a bag of Pacific Gold Baby White Potatoes. It was one of those things that I happened to have all the ingredients and I have a daughter whose is mad keen for balsamic soaked anything. It goes well with Uncle Russell’s Flank Steak.
