Don't you love it when you have all the ingredients for a recipe? These Brown Sugar Muffins go perfectly with your morning coffee.

Brown Sugar Muffins

Ingredients

1 cup old-fashioned oats

1½ cup flour

¾ cup packed dark brown sugar

2 teaspoons baking powder

½ teaspoon salt

2 eggs

¾ cup milk

¼ cup canola oil

1 teaspoon vanilla

Directions

1In a small bowl, combine the first five ingredients. In another small bowl, beat the eggs, milk, oil and vanilla. Stir into the dry ingredients just until moistened.

2Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-17 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

These look good and easy. I’m going to go make them right now. My only comment is that on the previous BLOG program, I could usually print your recipes on one sheet of paper. There’s no need to double/triple space ingredients and instructions. This simple recipe now takes two pages so I have to copy and paste, reformat in Word, etc., in order to print it nicely. But I love your recipes, so I’ll take them however they come!
