Zucchini with Lemon & Basil

So simple!  There is something very satisfying about being able  to go in the back garden and pick a lemon, fresh zucchini and basil. It’s so simple and delicious.

 Zucchini with Lemon & Basil

Serves 8

2 Tbs extra-virgin olive oil
4 medium zucchini, sliced in long thin strips with a vegetable peeler
Zest of 1 lemon
Salt and freshly ground pepper or lemon pepper
¼ cup thinly sliced basil

Heat the oil in a skillet and add the zucchini and sauté over high heat, tossing, until just tender, 2 minutes; remove from the heat.

Sprinkle the zucchini with the lemon zest, season with salt and pepper and transfer to a bowl. Scatter the basil on top and serve.
