Teeny Tiny Potatoes

I love buying the Teeny Tiny Potatoes potatoes at Trader Joe’s (you can also find these is some supermarkets for all you Trader Joeless people out there!).  I roast them with some olive oil, sea salt and rosemary.  The nice thing is that they don’t take long to cook.

Preheat oven to 425º

Put in a single layer in a baking dish.  Drizzle 1-2 Tbs of olive oil on the potatoes and then toss.  Season with sea or kosher salt and chopped rosemary.

Roast for 30 minutes, shaking the pan half way through.  They should be crispy on the outside and tender on the inside.  It couldn’t be easier!
