Japanese Mirin Poached Beef

Slicing meat paper thin is very easy, if you put the meat in the freezer for about an hour before slicing. Below is a very simple and low fat poached beef recipe. You can easily double it to serve more!
Japanese Mirin Poached Beef
Serves 2
½ lb piece rump steak, trimmed of all fat
5 oz vegetable stock
3 Tbs soy sauce
5 Tbs mirin
1 Tbs brown sugar
1 onion,halved and sliced
½ Tbs chopped pickled ginger
3 spring onions,finely chopped
1 red chilli,thinly sliced
steamed rice, to serve
Put the meat in the freezer while you prepare the other ingredients (this will help when slicing). Combine the stock, soy, mirin and sugar in a pan, bring to a boil, then turn down to a simmer. Add the onion and cook for 5 minutes.
Meanwhile, slice the meat as thinly as you can. Then add the beef to the pan and cook for a few more minutes, stirring, until opaque. Sprinkle with pickled ginger, spring onions and chilli, and serve with steamed rice and some of the cooking liquid spooned over.
