Quesadillas make a great lunch.  I love coming up with different interesting combinations.  One of my favorites is apple / pear and cheddar.  Slice the apples paper thin and use a sharp white cheddar.  Kids seem to really like this on

Here are some other ideas:

Cheddar & Chutney
Goat cheese, caramelized onions & walnuts
Fontina & pesto
Spinach sautéed with garlic & feta cheese
Mozzarella, tomato & pesto
Roasted chicken, Monterey jack & bbq sauce
Shaved deli ham Swiss Cheese & Cranberry sauce or chutney
Sliced meatballs with Marinara sauce & mozzarella cheese

These ideas also work well as grilled cheese.  Try to make up your own crazy combinations.  You could also have a party and create a quesadilla bar and have all kinds of ingredients for your guest to chose.
