Pasta Caesar Salad

You can please all the people, some of the time!

My daughter, Grace, has a very limited palate, which just about does me in. I struggle to make dinner for the family – something that will please everyone. I stumbled across a recipe that I cut out many years ago for Caesar Pasta Salad. What a great idea to combine both and add some roasted chicken for a complete meal. It was a big hit with everyone. I will definitely add this to our family repertoire.

Pasta Caesar Salad

Serves 4

¾ lb bow tie pasta
¼ cup bottled Caesar salad dressing
8 oz roasted chicken breast, skinned, boned and diced
2 cloves of garlic, minced
1 head of romaine lettuce, cut into 1½” pieces
½ tsp salt
¼ tsp pepper
½ cup Caesar or Parmesan croutons

Cook pasta according to package directions. Meanwhile, warm dressing in a medium skillet over medium heat. Add chicken and garlic; cook about 4 minutes, until garlic softens. Transfer to a large serving bowl.

Drain pasta; add to serving bowl along with the lettuce, salt and pepper. Toss to combine. Top with croutons.
