Mojito Pork Marinade

Marinating Meats

For dinner last night I marinated pork tenderloin for the grill.  I just happened to have all the ingredients and it turned out to be delicious.  The marinade makes the pork really tender.  My husband, Eric, poured off the marinade into a sauce pan and reduced it to make a delicious sauce.  WARNING:  You need to boil the marinade for at least 5 minutes to kill off any transient bacteria, then you can add a tablespoon of cold butter to thicken the sauce.

Mojito Pork Marinade 

1/4 cup chopped garlic
1/2 cup chopped onions
2 cups fresh orange juice
1/2 cup fresh lime juice
1/2 cup olive oil
2 tsp Kosher salt
1 Tbs fresh ground pepper
2 tsp ground cumin
2 tsp dried oregano
2 Tbs chopped fresh cilantro
