Parmesan Cheese Biscuits

When my husband and I lived in London, our eccentric friend Sandra introduced us to this savory snack. It’s very easy to make and unusal. I use mini cookie cutters and cut them into shapes – usually pigs or scotty dogs. These would go well with any cocktail, but especially with a cold Vodka Gimlet.

Parmesan Cheese Biscuits
a savoury shortbread
4 oz Flour
2 oz Butter
2 oz Parmesan cheese, grated
yolk of one egg
salt
1/4 tsp cayenne pepper
Rub the butter into the flour, add the egg yolk, salt, cayenne pepper, and cheese. Moisten with water if necessary.
Roll out the dough to a half inch thickness. Cut into 1 inch shapes. Arrange on a baking sheet and bake at 310 ° – 330 ° for 20 minutes. Serve warm.
NB – It is the thickness of the biscuits, which gives them their character. They can be stored in a tin and then heated up before serving.
